But there are so many directors that probably would end up on here if I only started exploring their work already like Dreyer, Bresson, Ozu...

Since you're an Ozu fan Rob, Koreeda- Still Walking, best modern channeling of Ozu perhaps ever.

Hong Sang-Soo is harder to say because he's one of those sum is bigger than its parts directors, but once you figure out that sum, every part/film is a masterpiece. If you really want to jump into him go with Virgin Stripped Bare By Her Bachelors, but be ready for some insane narrative structuring, which is what separates him from the pack. His easiest film to digest for me was last year's great In Another Country, less complex than the aforementioned and part English too, but actually for me one of his best.

If I could give you a reference point, it's Eric Rohmer meets Asian sensibilities and with all the humor, charm and especially humility that goes with that.
